A Thermocouple was used in the older mechanical gas valves. It converted thermal energy into a small electrical current which was used to interrupt a magnetic field to hold a gas valve open. This allowed fuel to flow through the valve and into the combustion chamber, with a current was around 20 to 30 millivolts. With the advancement of safety features on newer water heaters, gas valves have been updated and now have a circuit board inside them to indicate pilot operation and display error codes.
With the addition of these features, more current is required to operate the gas valve. The newer gas valves use the thermopile to generate a higher current, between 350 to 850 millivolts. Essentially a thermopile is a group of thermocouples, grouped together to generate more power.
